Ginger Carrot Soup Recipe
Ingredients: Cooking spray, 1 medium onion chopped, 3 Tbsp fresh ginger finely chopped, 3 cups carrots chopped, 1 medium potato peeled & diced, 4 sticks celery chopped, 8 cups vegetable stock, Salt to taste, Dash of nutmeg, Chopped fresh parsley, 1 tsp sour cream (optional).
Method: Heat large pot and spray with cooking spray. Add onion and ginger and sauté until tender. Add carrots, potato, celery and vegetable stock. Bring to a boil, cover, reduce heat and simmer until all vegetables are tender (about 30 mins). Puree the soup in batches in a blender or food processor. Add salt and flavour with nutmeg. Serve garnished with fresh parsley and sour cream.
