Health Benefits of Soup

Now that Winter has well and truly set in, you have probably found that the prospect of eating a cold salad for lunch is not so appealing.  Your body definitely talks to you when the weather cools down, and it is saying ‘feed me warm foods’.  Soup is the perfect meal for this time of year AND it’s so good for you.

Making soup can be likened to making a big pot of a multi-vitamin and mineral supplement.  This is because when you fry foods, you can lose a lot of the nutrient value in the cooking process.    However  vegetables, meat and / or poultry cooked directly in soups retain much more of their natural nutrient content. 

If you make a soup on a stock base (rather than cream) you are making a delicious meal that probably contains a lot less calories than most other dishes, however you won’t be depriving yourself of any less goodness and your appetite will be satisfied.  All-vegetable soups are particularly recommended due to their health benefits, ability to balance fluid levels in the body and low fat content.

I am often asked if canned soups are as healthy as homemade soup:  to be honest, while some of these have a low fat content, often they are high in salt and contain a number of preservatives and additives.   Nothing is better than cooking a soup – from scratch – so you can control what ingredients you add to it, then you know you are eating well.  I suggest that you make up a big batch of soup on the weekend and store it in 5 separate plastic containers:  your lunch for the whole week is taken care of!  If you think you will get ‘bored’ eating the same thing five days in a row, add different herbs / spices to each container so each day you will experience a new taste sensation!

Ginger Carrot Soup Recipe

Ingredients:  Cooking spray, 1 medium onion chopped, 3 Tbsp fresh ginger finely chopped, 3 cups carrots chopped, 1 medium potato peeled & diced, 4 sticks celery chopped, 8 cups vegetable stock, Salt to taste, Dash of nutmeg, Chopped fresh parsley, 1 tsp sour cream (optional).

Method:  Heat large pot and spray with cooking spray.  Add onion and ginger and sauté until tender.  Add carrots, potato, celery and vegetable stock.  Bring to a boil, cover, reduce heat and simmer until all vegetables are tender (about 30 mins).  Puree the soup in batches in a blender or food processor.  Add salt and flavour with nutmeg.  Serve garnished with fresh parsley and sour cream.
